150g self raising flour
30g sugar
1/2 t eastpoon salt
65g butter
enough icy cold water to make soft dough about 30-40g

Filling:
600g crushed pineapple in its juice
5 egg yolks
pinch salt
30g vanilla custard powder dissolved in a little water
75g sugar
50g butter

Meringue topping:
5 egg whites
40g caster sugar
pinch of cream of tartar
