Mini Beef Pies

Mini beef pies are fun, easy, and simple to make. They make a super dinner recipe and are even great for snacks or lunch boxes. They are an open faced pie made in a muffin tray with a combination of meat, vegetables and delicious cheddar cheese spread over the top. We buy the the puff pastry, but you can make it from scratch if you wish. The recipe makes about 12 to 14 mini pies. They store nicely in the fridge for a few days, so you can get a couple of different meals out of them. They are great served up with french fries and a salad.
