🍜 Easy Hot and Sour Soup

Posted: Thursday, March 02, 2017

Hot and sour soup originated in China, specifically the Beijing area, but found its way into Chinese influenced cultures in Asia, Europe, and North America. I love it on a cold winter’s day, but that certainly doesn’t mean I don’t make it in other seasons. Its hot, spicy, sour balance is indescribable. What can I say other than it’s a must try. There are several suggestions and variations to the recipe. To begin with, I use button mushrooms to make the recipe simple. You can, however, add some shitake or oyster mushrooms if you wish. This will give the soup a slightly different taste and texture.
The rest of the ingredients are pretty common but can be adjusted according to individual tastes. For example, more or less vinegar can be added to adjust the level of sourness, white pepper can be used instead of black pepper, the sriracha can be replaced with just about any hot sauce, or the amount of sugar can be increased or decreased. The list goes on and on and is a matter of individual preferences.
