Passionfruit Impossible Pie Cheekyricho idiot proof delicious dessert. We do hope you give it a try.
125g melted butter
150g caster sugar
50g all purpose or plain flour
100g desiccated coconut
7-8 full passionfruit. Mine yielded about 180g of fruit juice and pulp.
Mix all the ingredients together and bake in a greased 23cm or 9 inch pie plate for 45-50 minutes until slightly risen and browned around the edges. cool and serve cold with a dusting of icing sugar and more fresh passionfruit pulp or cream, ice cream, yoghurt, crème fraîche of custard if desired.
